Alcomat Gluco-Amylase Enzyme is a preparation used for saccharification during the mashing process and has the ability to convert starch from ground wheat, rye, rice, corn, etc. into to break down simple sugars (glucose). The glucoamylase enzyme is used in the mashing process in the saccharification phase. It prepares the mash for fermentation by converting complex sugars into fermentable sugars. The optimal conditions for the enzyme to work are a pH value in the range of 4.0 – 5.0. The most convenient way to adjust pH in small production conditions is to add citric acid. The recommended saccharification temperature is 60-65°C.
